bbq chicken ''pizza''

this literally took 20 minutes to make, start to finish! & it's honestly one of the yummiest recipes that comes together so quickly.

2 boneless, skinless chicken breasts
1 handful of cilantro, rinsed & chopped
1/2 cup red onion, diced/chopped 
mozzarella cheese [to taste, a small handful per pizza]
cheddar cheese [same as above]
bbq sauce [we like sweet baby ray's] 
tortillas or pita bread  [we used tortillas this time]

cook chicken on stovetop with a little bit of avocado oil [or any oil you use to cook with], salt & pepper until done. shred, mix with a little bbq sauce until coated & set aside.

while chicken is cooking, dice onion, chop cilantro & shred cheese.

preheat oven to 400 degrees 

assemble pizzas by laying the tortilla on a pre-greased or nonstick pan. spread a generous amount of bbq sauce leaving about 1/4 inch on the edges. 
sprinkle a small amount of cheese evenly on tortilla
add chicken, cilantro & onion to taste
generously cover the toppings with the rest of the cheeses

place in oven for 5-8 minutes or until cheese is melted & the edges of the tortilla are golden brown & crispy.
add more cilantro, if desired, as a garnish
cut into 1/4's & serve hot!!
