pineapple fried rice

so this recipe easily became a new favorite. 
easy, nutritious & pretty inexpensive to make. all win-win in my book.

the only thing that i would change is probably using half of the shallot instead of the whole thing - but i'm not one who likes a super strong onion-taste. 
also, do pre-chop/dice/mince everything cause it all does go pretty quickly, as she said. i would start the rice before starting to prep everything cause, that way the rice is pretty much done by the time you start to cook all of the veggies.
